Ice Wine harvest is typically done in the early morning hours when temperatures dip well below freezing. The natural water content that is found in the grapes needs to be frozen when harvested. This results in a concentrated thick extraction of juice which in turn is used for Ice Wine. Typically, the brix level is between 37-40 brix which is ideal for producing this decadent dessert wine.
Ice Wine varietals in the Grand River Valley region include Vidal Blanc, Concord, Cabernet Franc and Chardonnay. Producers in the Grand River Valley AVA of northeast Ohio are electing to brave freezing temperatures to pick grapes for the 2022 ice wine vintage, according to Cleveland.com. The network reports vineyard workers at several wineries hand-picking grapes in sub-zero temperatures.

The 20th annual Grand River Valley Ice Wine Festival has become one of the largest March festivals in Ohio, drawing thousands of winter-weary visitors wishing to celebrate a wine unique to cold-weather places.
The $8 fee charged at each winery includes a cordial glass, as well as an ice wine taste and appetizer, giving participants a chance to collect a half dozen glasses to take home. A distillery serving an ice wine cocktail is among the mix.
Ice Wines, the most famous of sweet wines, are produced from grapes that have been frozen while still on the vine to concentrate its juice, resulting in only one or two drops of sweet syrup per berry.
According to Philippe Coquard, a 13th-generation winemaker from the Beaujolais region of France, few European countries still make ice wine due to climate change and a lack of consistent cold weather.
They started off with white varieties like Louise Swenson, La Crosse and La Crescent, all developed by the University of Minnesota, with promising results. But after they sampled a red ice wine made at Inniskillin on the Niagara Peninsula, who are largely credited with popularizing ice wine in Canada, DeBaker turned to Frontenac and Marquette grapes.
Owners Victoria and Jeff Wilde first learned about ice wine from Coquard (of Wollersheim Winery) at a Minnesota Grape Growers Association conference a few years ago. When one of their crops produced a yield too small for use in their regular wines, they made the decision to leave the grapes on vine and make a try at ice wine.
The Wildes have three acres of grapes on the same property as their winery but one of its biggest selling points is the exclusive use of 100% South Dakota-grown Frontenac grapes, honey and fruits in its wines, including cherries and plums they grow themselves.

Ice Wine Festival at Grand River Valley Wine Region in Northeast Ohio: Several popular Ohio wineries join together for this unique winter event. Patrons will visit each of the participating wineries and sample their Ice Wine along with a complimentary appetizer. Many of the wineries will also have a featured event including ice carving, jewelry shows, dog sledding & much more. The cost is approximately $6 at each winery, which includes wine samples, an ice wine glass at each winery, appetizer, and special events. Participating wineries include Debonné Vineyards, Ferrante Winery & Ristorante, Grand River Cellars Winery & Restaurant, Laurello Vineyards, and St. Joseph Vineyards.
Pressing removes water from the grapes, which have dried some already on the vine; the water, still frozen, gets left behind as ice. The juice that results, essentially now concentrated, has sky-high sugar and flavor. In the end, so does the wine it makes.
Awards in last year's Ohio competition also went to ice wines from Ferrante, Valley Vineyards in Morrow in the Ohio River Valley wine region, Gervasi Vineyard in Canton in the Canal Country region and Grand River Cellars in Madison in the Grand River Valley. 781b155fdc
